How to Cook Dindigul Biryani (Pressure Cooker / Instant Pot)

  • Gently wash Seeraga Samba rice and soak for 30 minutes.

  • In a pressure cooker, add the masala kit contents, 400g of chicken, mutton, lamb, or vegetables, and sauté for 1 minute. (For mutton/goat, pressure cook the meat separately for ~30 minutes first.)

  • Add 400ml of water and bring to a boil.

  • Strain the soaked rice and add to the cooker. (Salt is pre-added; adjust to taste.)

  • Cook on medium heat for 2 whistles (or 4 mins on low pressure in an Instant Pot).

  • Let it rest for 20–30 minutes before serving.
